Here is something that I like to do this time of year when I have lots of tomatoes. Are you looking for something to do with tomatoes? Try making your own pasta sauce! It is pretty simple and so good! Making your own pasta sauce is a great way to introduce veggies when introducing solids. Here is more info on starting solids from La Leche League Canada.


This is a very inexpensive recipe for me to make. Thanks to Echo Food Rescue https://echolacombe.ca/food-rescue/ I had a lot of tomatoes, onions and basil that needed using. If you haven't heard of this non-profit organization and are near Lacombe, check it out! It is a great way to save on groceries and also inspires meal ideas.



*Tomato, basil, garlic and onion that I will freeze for making sauce another day.


Trisha's Pasta Sauce Recipe


Ingredients (I don't measure):


Roughly 20 tomatoes

A generous handful of chopped/sliced onion

Fresh basil

Garlic

Drizzle of olive oil

Vegetable seasoning

Salt to taste

2 tbsp or to taste beef/chicken/veg bouillon powder


Directions:


I do not peel my tomatoes. I put everything into a large pot and let it cook down on med-low for probably an hr. It is something I don't need to watch too closely. Once it is soft, I put it into my blender and blend till everythjing is pretty smooth. I use a vitamix. If you aren't a fan of a little tomato peel, you may want to consider taking your skins off before. 1 bag makes about 3 medium jars. Keep them in the fridge or freeze. These make a great gift! My husband just took a few jars to give his coworkers today.


Alternatives:


Sometimes I add feta, carrot, spinach, peppers, red chilly pepper flakes (whatever you want!)
